Exchange 2010 allows individual restoration of email..

Symptoms

User request restoration of email deleted.. 

Resolution

These are the steps to resolve the problem. 

  1. First step is to log on to Orange or Master Server (being Ice or Purple)
  2. Second step >Backup/Archive and Restore run as administrator
  3. Use - Policy Type - Exchange Server client source Yellow, client destination Orange
  4. Third step - Restore > show everything backed up> pick date> Expand info store
  5. See all databases > Choose (ex. Full Time Employees)> Drill down to requested user> Find email and restore
