Exchange 2010 allows individual restoration of email..

These are the steps to resolve the problem.
- First step is to log on to Orange or Master Server (being Ice or Purple)
- Second step >Backup/Archive and Restore run as administrator
- Use - Policy Type - Exchange Server client source Yellow, client destination Orange
- Third step - Restore > show everything backed up> pick date> Expand info store
- See all databases > Choose (ex. Full Time Employees)> Drill down to requested user> Find email and restore
